Im back

After a several month hiatus from WordPress…not intentionally I am officially back! I have been working my bottom off at Vogel Alcove and proving myself to be worthy of full time and all my hard work has finally paid off! As of today I am a full time employee! I have taken on many random task over the past several months and cant wait to work even more! Not many people can say that on a Monday morning they are excited to be going to work…I can. Instead of writing out a long blog about everything that has happened over the last months I will highlight some of the important stuff.

  • End of the year holidays were fantastic!
  • Jason and I celebrated our 9 year anniversary on 01/29
  • We celebrated Jason’s birthday on 2/18
  • In April our Non-Profit moved from a very small location that we had been at for 15 years to our new facility which was an old 3 story elementary school in DISD. Dallas Morning News Story
  • Jason bought me a Samsung NX300 camera for my birthday which we celebrated on 5/18 (over $1000 worth of camera, lenses, bag etc and we got it for $250! Was only used a couple of weeks by a photography student)
  • I have officially become the Vogel Alcove Photographer, taking photos of all the volunteers that come to visit, field trips, special events and birthdays!
  • I have continued to struggle with my health and weight. Started a new healthy eating plan with a daily food diary and work out routine yesterday. I actually have Jason on board with me! Wish us luck!

I promise to post at least once a week from now on! I will leave you with a recipe I threw together from dinner last night. Enjoy!

Veggie Explosion:


  • 6 cups fresh Kale
  • 2 cups frozen Butternut Squash cubed
  • 1/2 bag of frozen corn Corn
  • 1 can of Chickpeas drained
  • coconut oil
  • red chili pepper flakes
  • salt and pepper
  • avocado


  • Preheat oven to 450
  • Toss the chickpeas and squash with some melted coconut oil (just enough to lightly coat) and sprinkle with salt, pepper and chili flakes.
  • Spread out the mixture on a cookie sheet and back for about 25 min or longer if you desire more crispy veggies.
  • In a large pot add couple tsp coconut oil and the corn.
  • Fry lightly for a few minutes then toss in the kale.
  • Cook for about 5 min tossing often so that the kale does not start to burn.
  • Peel and dice one large avocado.
  • Once everything is done place ALL ingredients into a large bowl and toss it gently so that you do not mash the avocado.
  • Serve and ENJOY

PIZZA!! One of our favorite meals. I am so glad that I have a talent for making it homemade/semi-homemade. Yes…every once in a while that greasy super fattening carb loaded delivery pizza is ok. However once you taste my pizza, you will wonder why all these years you have been stuffing your faces and paying high prices and deliver fees for something you too can make at home!

So I usually make my own crust, however last night I was in a hurry so I opted for Pillsbury can crust. I must say that it was the best texture of any store bought crust I have ever purchased. I of course rubbed it down with some EVOO and oregano and garlic for flavor 🙂

Toppings were a great variety of fresh veggies, Boca meatless crumbles and homemade sauce! Below you will find a complete list of ingredients and directions.

On and off yesterday (I was very determined) I practiced my hula hoop. I FINALY was able to keep it going for about 20sec! I was so proud I had to give myself a high five. My sides are a little sore this morning but “NO PAIN…NO GAIN”

Today I came in an hour early in hopes of getting off an hour early….not happening…actually staying 30 min late! Oh well thank god for three day weekends.  Speaking of three day weekends, hope everyone has a fun and safe holiday! We will be finding somewhere to swim at some point. Also on the agenda is a bbq picnic with our two wonderful pups and trying out this coffee shop on lower Greenville, they are now carrying HYPNOTIC DONUTS!

As mentioned above here is a grocery list of items for my semi-homemade pizza:

Bake crust as directed and rub down with EVOO, garlic and oregano.


Mix tomato paste with water, crushed cherry tomatoes, basil, garlic, salt and crushed red peppers.


Apply sauce to crust.

Later toppings.


Bake for an additional 30min or until crust is golden and pizza is bubbly!!




just dinner…

I hate it when I really don’t have anything interesting to say!  I was in a real funk today.  Work went slow as heck and came home to watch some Netflix. I just finished season one of an awesome show called  “Bomb Girls” check it out. I will leave you with a pic of my healthy dinner I cooked tonight. Asparagus, Brussel Sprouts, Black Beans seasoned with s&p, garlic and my usual crushed red peppers. (i put it in EVERYTHING)To go along with it a Boca Burger Chickn’ Patty.

Sun is setting and it defiantly made an impact on me today….i am beet red! Good thing with me though is that I will be nice and brown by morning. I always tan well.

Today has been a great day. Woke up and got ready to do a family photo shoot at Dallas Fair Park, The Smith family were an awesome group! We got a good hour in of amazing photos.

Once I got home I put on my sundress and grabbed my honey to head out on a neighborhood stroll. On our walk we found a neat coat rack, a vintage mail/key holder and cool black coffee table with glass top that people were throwing out!! I love curb side finds…and we needed a coffee table really bad!

The rest of the day I spent outside with my doggies sipping on some sweet tea or inside editing the photos from today’s shoot. Tonight we will be going down the street to Zubar to see a friend spin 🙂

Morning…not going to say “good”morning because nothing is good about the headache I have from not drinking soda for the past 3 days! Maybe I shouldn’t quit cold turkey like this…maybe I can have just one 🙂

Yesterday we went to RAC (rent a center) to lease a laptop, the sales guy/manager was super rude and very inpersonable. Wasted an hour and a half of my day to find out it would be 59$ a week!!! ridiculous! Walked down the street to a pawn shop and got a laptop for $85!! Amazing! Sorry jusnt had to rant a little and brag at the smae time.

I went to Walmart later on yesterday and used some of my coupons (walmart price matches) and was able to get some pretty good deals. I also did some grocery shopping for my “healthy” dinner and lunches. Last night I had a black bean Boca Burger on a bed of romaine, tomatoes, roasted corn, red pepper flakes and drizzle of evoo. It was DELICIOUS! I took a photo but forgot to bring my camera to work today. Will update blog tomorrow. I am trying to do as much “whole food” as I can but it is hard to switch all at once. I am now just being more cautious about the pkg foods I am buying which is still going down a better path! For breakfast I am having whole wheat waffles with no syrup or butter and fresh fruit. Lunches I am having boca burgers and boca chicken patties with salads. Snacks I have greek yogurt, fruit, nuts and Kellog’s Special K protein bars and shakes. For drinks I am having tea, water and vitamin waters. I am very proud of myself and they changes I have made already.

Today at Vogel Alcove we are hosting a “Coffee with Kids” no…kids are not having coffee lol. We are welcoming  potential donors and volunteers to come in throughout the day to take a tour of our facilities, visit with the children of Vogel Alcove and get any questions they may have about our organization answered.

Yesterday we had a orginization called Mazies Mission here. They come once a month and bring in rescue dogs for the children to interact with and they read “dog related” books to the children for a brief story time. The children LOVE this day…except for the very  few who are terrified of dogs. This helps them get over that fear though!

I have a plan….

Good morning world!

Here is what I ate last night


Meatball Subs with mozzarella and green onions and a side of Sweet Potato Fries

It was DELICIOUS….not the healthiest food choice but delicious. 🙂

That being said…I have decided that I am done with being the unhealthy, overweight, poor eating person that I have become! Time to head down the path of being the person I KNOW I can be!

As far as exercise…I walk….ALOT…but it’s obviously not enough! Starting Monday 4/8/2013 I am beginning a 30 day walk to run challenge. So in 30 days from now I should be able to jog/run a full 30 minutes. I will update daily on my progress as this will help me be completely honest and committed to finishing my goal!

As far as eating habits….goodbye fried food, over processed foods, fatty foods…well you get the idea 😉 I have decided to start a “Whole Food Lifestyle” This will defiantly take some time getting used to and incorporating it into my eating habits 100% so I plan to slowly eat or toss what is in our kitchen while bringing in the healthier “whole foods”

The hardest part for me is going to be kicking the soda habit. Right now I am drinking about 2 20oz a day…which is better than what I was drinking (12pk in 24 hrs)

Last night I made some homemade oatmeal squares to cure my sweet tooth craving! SOOOOO YUMMY!  Way better than store-bought snacks IMO.


  • Quick Oats
  • Honey
  • Raw Peanut Butter
  • Coconut Flakes
  • Coconut Oil
  • Semi Sweet Chocolate Chips

I don’t really know the measurements because I just kinda threw it together!!! I’ll make sure I measure next time. In the pic below they were just made and not set properly. After about 30 min in the fridge they were nice and firm!


So for the next couple weeks I am sure I will be cranky and complain…a lot. But I can get through this and I WILL get to the place I desire to be.

Poor Food Habits and Bus Rides….


Yesterday was a long day. I had plans for an awesome dinner but by the time I got home and settled in….chicken nuggets and crinkle fries it is!

I know that is a very poor food choice….I know I need to lose weight….i know these things.

Whats done is done.

To make up for it, tonight I will be making homemade Black beand and Sweet potato burritos! High fiber and Protien…low fat…just what my love handles need right now 😉

Now for a moment of “This just happened”

I was on the #26 waiting for departure and i kept hearing the sound of a soda can being opened…like three times in a row from the lady in front of me. A little curious I decided to stand up and streatch my legs. What do I see? This lady…had to be in her late 70’s early 80’s popping open beers and pouring them into a Big Glup 32oz styrafoam cup!!! She looks up at me and says with a grin on her face “What?”

This my friends….just happened.
